Nothing breathes luxury quite like lobster and champagne. Well, maybe Monaco in spring, but we’re talking right here, right now!
After sell-out pop-ups in Sydney and Melbourne, it’s the Gold Coast’s turn to welcome the Lobster Shack to the Gold Coast for three weeks only in January 2018.
The popup is the brilliant idea of Jeff Schroeter and Dave Wallace, owners of a stable of Sydney venues including Opera Kitchen, The Basement and Cod & Co, who started selling lobster rolls in their Cod & Co kiosk in Westfield City Tower as the lease came to an end.
“We were looking for a new idea for when the seafood shop closed. We’d encountered lobster rolls in the US when we were working there,” Jeff tells us, “and thought they were sensational.”
After time perfecting the item, the rolls were such a hit that the guys took their popup to Melbourne in December 2017 and on to the Gold Coast in January.
Think 300 lobster rolls a day and 80 dozen bottles of Veuve champagne over a two-week period and you’ll know you’d better get your walking shoes on!
Taste-wise, it’s a blast of luxury, with a rich flavour profile that many will not have encountered before.
The Lobster Shack uses wild caught Clearwater Maine lobster tail, slow cooked in a butter bath and served inside a freshly toasted brioche bun with buttermilk slaw. What could be more decadent?
Known for their sweet flavour and tender meat, Maine lobsters have a buttery delicate meat with a different texture to either Moreton Bay Bug or Australian lobster. Lobster Shack cook it perfectly, the yeasty acidity of Veuve Clicquot the perfect balance to cut through the richness of the meat.
We’re impressed that the guys have chosen local Gold Coast Bakeries to make their buns, the perfect partner ‘sliding away’ in the profile, as Jeff puts it, leaving the lobster to bask in the spotlight.
The lobster rolls are served with a side of very moreish crispy Parmesan Truffle Fries for only $35 or with a glass of Veuve for $50.
Love Lobster Shack enough and they may be back next year. Already they’ve had interest in their popup from Japan and France.
With a glass of Veuve Clicquot in hand, it’s an affordable, delicious and totally irresistible lobster and champagne experience.
“It’s a simple idea,” says Jeff. “What more could you want?”
