Seascape holds the ultimate position – in the gorgeous Soul building in the very centre of Surfers Paradise directly overlooking one of the most iconic beaches in Australia.

Location, location, location! Who could ask for more! Seascape has three levels: a casual bistro on the first floor, on the second a gorgeous restaurant perched high above the surf, topped only by the rooftop bar, one of only a few in Surfers Paradise, on the third level. Perfect!

Seascape can be accessed from both an escalator and lift located just inside the Soul Arcade. Take the bridge across to the tower and embrace the view. Spectacular!

We have dined at both the Seascape Bistro on the first level and the restaurant on several occasions.

With bi-fold doors open to the sea breeze, The Bistro is a perfect place to enjoy a refreshing summer cocktail and light meal. The Bistro’s menu is flexible with a range of dishes, many in two sizes, suitable to share between diners.

This proved to be a great way to dine, the selection covering many bases: the cured salmon, yellowfin tuna and hiramasa kingfish sashimi, so perfect it disappeared in seconds, was balanced by the richness of the pork belly, an excellent buttermilk-soaked salt and pepper calamari and a generous helping of softshell crab on fattoush salad. Highly successful, our experience at the bistro enticed us upstairs to dine.

Created by owner Fouad Eid and his brother Eddie, Seascape Restaurant surrounds us with the textures of the sea shore: walls white with sculpted sand, the crust cracking away into layers from the summer heat; menus with thread-like textures of seaweed rest on stylish Spotted Gum tables, while the carpet imitates shades of rocky grey along the shore, textured and weathered. Subtly referencing its own name, the restaurant is understatedly elegant. Beautiful, even.

Seafood is the main highlight of the menu, but meat lovers are catered for as well, with chicken, beef, lamb and even kangaroo options available.

With the restaurant sourcing at least six different types of fresh fish daily, making a choice is difficult. Instead, we leave the decisions to the chef with a five course chef’s seafood selection banquet ($85, or add $55 with matching wines), our choice on both occasions an indulgent seafood feast.

We begin with two Coffin Bay oysters served in two ways – a duo of tastes, stunningly fresh.

The second course of soup varied on our visits between a Prawn Bisque or our preference, Bouillabaisse, a piquant seafood broth scented with star anise, saffron and lemon, with a good amount of fresh seafood.

The next course, Daily selection of Australian raw and cured fish, is outstanding. It features raw tuna and salmon with a host of little accompaniments such as wakame, pickled radish, as well as dehydrated egg, salsa and clementine. It’s a clear indication of the technical skills of Head Chef Joel Bryant; a wander through a culinary garden that piques our interest.

Two scallops appear next, served with truffled white bean puree, rosemary maltodextrose and Wagyu biltong dust. Superb!

Chargrilled wild line-caught barramundi is our fish of the day, served on a bed of smoked tahini with sides of tempura asparagus and potato gratin. The barra is perfectly moist, breaking away easily off under the fork, the smoked tahini adding an unexpected twist of flavour to the fish.

On one occasion we also enjoy a gorgeous trio of desserts: a deliciously decadent Dark Chocolate parfait, a light Coconut tart with pineapple sorbet and confit, and Turkish delight doughnuts with saffron honey jelly, Persian fairy floss and pistachio ice cream. The doughnuts are one of a few dishes showing a subtle touch of Middle Eastern influence. Cheeses are also available.

Overall, the beauty of Seascape wins every heart. The venue is superb in every way, service from our French waiter charms the socks off us, and the food is artfully plated.

This is a classic but restrained seafood menu, not pushing boundaries, showing off fresh seafood.

While we feel it would be great to have the option of a more experimental chef’s selection available, or a little more drama in presentation (presenting the whole fish for inspection, perhaps), this classically-inspired menu will please many diners who wish to enjoy the sea’s bounty upon its very shores. After all, the location is the ultimate winner.
