There are many ways to choose where you want to dine: food, vibe, service, friends, location.

For us, location is the most negotiable, and food the least so. If the food is ordinary (or worse), nothing else can make up. Smash the food, service and atmosphere off the charts and you’re on a winner.

IMG_6243 N3 Tapas Bar overlooking Seaworld Drive at the front of Marina Mirage has a tradition of exciting share plate cuisine. Head Chef and Manager Insung Hwang’s menu of modern Australian tapas incorporates an intriguing new dimension: Korean, Japanese and Mediterranean influences.

Korean by birth, Insung only began cooking after he migrated to Australia eight years ago. After training at Le Cordon Bleu in Sydney, Insung worked at Hamilton Island, Melbourne, Brisbane and Manfredi at Bells before settling on the Gold Coast.

Here, surrounded by Jamie Cutrupi’s gorgeous street art in the iconic Marina Mirage, he is given creative liberty by the restaurant’s owner, Jamie.

The menu is divided into sections: To Start, From the Ocean, From the Garden, From the Paddock and To Finish. It outlines a journey, not only through the sources of local produce, but also through the cuisine’s sources of inspiration.

While the presentation of Caramelised pulled pork in a soft bao is fairly standard, its accompaniments of pickled cucumber, coriander, peanut, and sweet soy carry a real tang.

Other dishes show Asian inspiration; however, their presentation’s weave of cultures is intriguing. Tiny Crab and zucchini fritters are topped with wasabi aioli and dried bonito flakes waving in the breeze. Spring rolls show off long claws of softshell crab and mushroom, bedded down on pumpkin purée and sweet chilli pear.

To me, it’s the Fried sumac dusted tofu which says it all. With allusions to both Salt and pepper tofu and Agedashi tofu, the dark dusty-clad tofu sits in a puddle of sunflower seed, cinnamon and za’atar spiced soy sauce. It’s a finely balanced, intriguing combination of flavours, one that could easily have been oversalted, saved only by the chef’s finely tuned (non-smoking) palate. What a joy it is to discover such an unusual dish!

“Taste, freshness, balance and harmony. They are the principles I seek in every dish,” Insung tells us.

It’s then we realise: applying Eastern principles of harmony, Insung is taking us on a culinary world journey, often within one dish.

Delicious pork belly, juicy kofta with three cheeses, and char-grilled chicken with plum wine soy sauce, chilli corn salsa and Brussel sprouts are also standouts.

Desserts of Mango semifreddo and Salted chocolate pave follow, their origins more modern Australian, back to earth.

Each dish we try is so delicious that you may need banquet options to help you make a choice. A good choice would be a long lunch from noon until 5pm on Friday, Saturday or Sunday offering three tapas for $40 or five for $60, as well as discounted beverages.

There are also set menus to feed two or more people for $49 (including a gluten-free and vegetarian menu) or $69, as well as banquet and event menus devised to suit preferred dietary requirements.

A venue destined to attract celebrations and functions, there’s lots to please, cocktails on offer and a very interesting wine list to check out. With exceptional food, a funky vibe and very friendly attentive service, all we need to do is to take a few friends… Are you free?
